The Penguin Book of Zen Poetry edited & translated by Lucien Stryk & Takashi Ikemoto

This is not purely Japanese, starting as it does with Chinese Zen poetry over a century before Zen came to Japan. It's also not much use as an intro to the subject for those who don't know so much already - I like the personal nature of Stryk's intro, but it doesn't tell you enough about how the poetry works, possibly because he believes in Zen, so feels that is the main point. This is not very useful for most of the haiku, the largest section of the book. Still, there are lots of great poems, and the translations are very good (Stryk is a poet).
