There is no any turkish mafia involved, not either one. At first, the turkish guy opened over 26 years ago on the main streets of London couple of steak houses(the green one), the oldest one was next to Victoria coach station. The business went very well, yes hiring a lot of illegal staff, payrate was very low, but he managed at the right time to barrow money and open more.In 1998-99, the business was very hard to keep up, cause he did not have any control on managers, chefs were bringing their own steaks, working together with managers they were sharing the money even with waiters, just to keep everything "under water". The only reports that he was getting, it was handwrited cheks (kind of having a number on it)but the managers could falsificate those tons and tons. So, desperate he left just a few of them, otherones he sold to 2 gipsy brothers, that did a very good job, they bought computers (to keep the track of any steak), they fired a lot of turkish staff that was incompetent, the best what they do is they leave the staff to colect their own individual tips, not pots to share, not once a week with your paycheck, this what keep a lot of people in there. The biggest problem is they do not have till now the idea how important is to invest in management staff, that are really educated, and know and law, and accounting, and management. But this is not their main revenue, they doing well in Blackpool, so all of this is almost nothing, but this nothing it means 1mln pounds profit a year.
