1 good fistful of fresh mint
juice and zest of half a lime
salt + pepper to taste

Bung all the above in a blender and blitz for 20 seconds.

Artfully adorn your plate with puree alongside scallops or salted cod or lamb chops or fish cakes or chicken goujons etc. etc.</description>
